Banana Bread

Yields1 Serving

 ½ cup butter, softened
 1 cup sugar
 2 eggs
 1 ½ cups unbleached flour
 1 tsp baking soda
 1 tsp salt
 1 cup mashed very ripe bananas
 1 cup sour cream
 1 tsp vanilla
 ½ cup chopped pecans

Preheat oven to 350 F

Cream butter, sugar and eggs

Stir the dry ingredients and combine with butter mixture

Blend well

Add the bananas, sour cream and vanilla

Stir in th nuts and pour into a well greased 9X5X3 inch loaf pan or several smaller pans

Bake 1 hour. Turn onto rack to cool
