This is not the traditional onion soup. But it is very soothing (comfort food).
Cook the onions in the butter without letting them brown.
Add the flour to absorb the butter.
Add the water, then the salt, pepper and nutmeg.
Cook slowly on medium heat until soft.
Put through the blender.
Pass through a sieve.
Add cream as needed.
Serve with garlic croutons.
