Add coconut, then cook, stirring, for 1 minute, until just beginning to colour<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Shrimp<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Add fennel and coriander seeds, peppercorns and saffron<br \/>\nCook, stirring, for 1 to 2 minutes, until spices begin to pop and coconut is toasted<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>Tip into a bowl and let cool to room temperature. Grind coconut mixture in a spice or coffee grinder<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>Toss shrimp with coconut mixture and 1 tsp (5 mL) of the oil in a medium bowl<br \/>\nCover and marinate at room temperature for 30 minutes. Season with salt<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>Preheat oven to 450\u00b0F (230\u00b0C)<br \/>\nBrush a baking sheet with remaining oil<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 6\">\n<div class=\"cooked-dir-content\">\n<p>Arrange shrimp in a single layer on baking sheet, then bake for 3 to 4 minutes, until pink and curled. Set aside to cool<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-heading\">Mango salad<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 7\">\n<div class=\"cooked-dir-content\">\n<p>Combine lettuce mix and basil on a serving platter<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 8\">\n<div class=\"cooked-dir-content\">\n<p>Peel mango with a vegetable peeler, then use peeler to shave mango flesh into ribbons.<br \/>\nScatter mango over lettuce mixture<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 9\">\n<div class=\"cooked-dir-content\">\n<p>Peel and shave cucumber the same way and add to platter. Scatter red onion over salad<\/p>\n<\/div>\n<\/div>\n<div class=\"cooked-single-direction cooked-direction\" data-step=\"Step 10\">\n<div class=\"cooked-dir-content\">\n<p>Whisk together chili sauce, lime juice and vegetable oil in a small bowl.
