This is scrumptious and a bit boozy. I always serve them with meringue mushrooms.<\/h2>\n

Sponge cake<\/div>\n
3<\/span> <\/span> large eggs, separated<\/span><\/div>\n
25<\/span> g<\/span> superfine sugar (Caster in the UK , fruit sugar in Canada)<\/span><\/div>\n
25<\/span> g<\/span> cocoa powder<\/span><\/div>\n
1<\/span> tsp<\/span> cinnamon<\/span><\/div>\n
½<\/span> tsp<\/span> ground ginger<\/span><\/div>\n
1<\/span> pinch<\/span> ground cloves<\/span><\/div>\n
Buttercream<\/div>\n
60<\/span> g<\/span> dark chocolate<\/span><\/div>\n
100<\/span> g<\/span> unsalted butter <\/span><\/div>\n
180<\/span> g<\/span> icing sugar <\/span><\/div>\n
2<\/span> tbsp<\/span> Brandy<\/span><\/div>\n
Chocolate ganache<\/div>\n
150<\/span> ml<\/span> dark chocolate<\/span><\/div>\n
100<\/span> g<\/span> chocolate<\/span><\/div>\n<\/div>\n

Pre heat oven to 350\u00baF
\nGrease and line a jelly roll pan (baking tray) with buttered parchemin paper.
\nLet the paper overhang on each side to make unmoulding easier.<\/p>\n<\/div>\n<\/div>\n

Whisk the eggs whites first until peaks start to form
\nAdd 25 gr sugar
\nWhisk some more until the peaks are holding put aside<\/p>\n<\/div>\n<\/div>\n

Whisk egg yolks with 50 gr of sugar until pale and fluffy
\nSift cocoa powder, cinnamon, ginger, cloves and fold it all in, with a spatula to avoid deflating
\nFold 1 tbsp of the egg whites to loosen up the yolks
\nThen gently fold in the rest of the whites in three additions<\/p>\n<\/div>\n<\/div>\n

Pour the batter on the jelly roll pan, spread it evenly.<\/p>\n<\/div>\n<\/div>\n

Bake 10 to 12 minutes until it bounces up when touched<\/p>\n

Once out of the oven, sprinkle a sheet of parchment paper with sugar and invert the cake onto it.
\nRemove the parchment paper that was used for cooking.
\nRoll the cake in the paper along its entire length (starting from its narrow part if you are making one large log and from the wide side if you are making mini yule logs).
\nCover with a tea towel.
\nLet cool.<\/p>\n<\/div>\n<\/div>\n

Break up chocolate in bowl over water at low heat until melted.
\nTake off the heat.
\nBeat butter until smooth pale and fluffy
\nSift icing sugar over butter in 2 stages, beat with mixer
\nAdd brandy mix until pale and fluffy
\nAdd chocolate and mix<\/p>\n<\/div>\n<\/div>\n

Spread buttercream over the sponge cake
\nTrim edges
\nIf you are making mini logs cut cake in 8 parts and roll each one away from you,
\nif you are making one large log roll the whole thing.<\/p>\n

Heat cream
\nBreak chocolate
\nPour cream over chocolate
\nWait 1 minute and stir.<\/p>\n<\/div>\n<\/div>\n

Assembling yule log<\/div>\n

\n

Spoon ganache over log…wait a bit and then draw bark marks into the ganache.
\nAdd marzipan holly leaves and berries to decorate
