large pot filled with cold water, put the meat cubes and bring to a boil.<br \/>\nOnce bubbling start, skim the surface completely.<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 2\">\n<div class=\"cooked-dir-content\">\n<p>Add onions, carrots, leek, bouquet garni, salt and pepper and let simmer for 1 h 30 to 2 hours.<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 3\">\n<div class=\"cooked-dir-content\">\n<p>Once the meat is cooked retrieve the cooking liquid which will be used to make the sauce.<\/p>\n<p>\u00a0<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 4\">\n<div class=\"cooked-dir-content\">\n<p>In a pan melt the butter, add the flour and stir.<br \/>Pour a bit of cold milk to dilute.<br \/>Then slowly add the cooking liquid as you whisk, until you have the proper consistency.<br \/>Let cook for 10 more minutes.<\/p>\n<\/div>\n<\/div>\n<div id=\"cooked-single-direction-step-\" class=\"cooked-single-direction cooked-direction\" data-step=\"Step 5\">\n<div class=\"cooked-dir-content\">\n<p>At the last minute mix the egg yolk lemon juice and cream in a bowl and add to the 6\">\n<div class=\"cooked-dir-content\">\n<p>Serve the meat, vegetables and the sauce, with a long grain
