Yesterday I decided to test it and tried three dishes.<br \/>\nThe first one was called &#8220;Fish timbales with wasabi dressing&#8221;. It involved making a halibut mousse and sandwiching it between two layers of salmon mousse. All easy stuff, but the novelty for me was decorating the timbales with fried spinach. It worked!! Spinach becomes crunchy and a gorgeous colour when fried for a few seconds.<\/p>\n<p><a href=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/moussepoisson.jpg\"><img fetchpriority=\"high\" decoding=\"async\" class=\"alignnone size-full wp-image-1760\" src=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/moussepoisson.jpg\" alt=\"\" width=\"500\" height=\"375\" srcset=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/moussepoisson.jpg 500w, https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/moussepoisson-300x225.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>The main course was mustard (and olive) steak on portobello mushroom, which, although not spectacular to look at, tasted very good. I chose to accompany this with another recipe from the book called &#8220;Goat&#8217;s cheese and bacon goug\u00e8re&#8221;. A goug\u00e8re is basically a savory choux. They look like souffl\u00e9s but are not as light or soft. This one was flavoured with bacon and goat cheese and topped with ratatouille.<\/p>\n<p><a href=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/goug8fres.jpg\"><img decoding=\"async\" class=\"alignnone size-full wp-image-1761\" src=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/goug8fres.jpg\" alt=\"\" width=\"500\" height=\"375\" srcset=\"https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/goug8fres.jpg 500w, https:\/\/flyingplates.com\/wp-content\/uploads\/2018\/11\/goug8fres-300x225.jpg 300w\" sizes=\"(max-width: 500px) 100vw, 500px\" \/><\/a><\/p>\n<p>OH!!! I almost forgot!
