Easter is often associated with eggs: egg hunts, painted eggs, chocolate eggs\u2026 To carry this theme I chose a recipe for my Easter brunch that involves omelets: three of them! Each one a different colour. A green one made with watercress and spinach pur\u00e9e, a red one made with tomatoes and garlic and an ordinary yellow one. In preparing them I came across an oddity: a two yolk egg. If you look closely at the photo you will see these are not 2 eggs together, it is really two yolks surrounded by one egg white. I wonder if there are twin chickens in nature coming out of one egg\u2026<\/p>\n

For those of you who are curious, the recipe entailed cutting circles out of the omelets and piling them up sandwich style with layers of very finely chopped ratatouille.
