This is an all around favourite! Easy to make, easy to pack, and easy to eat!

Crust
1 cup All purpose flour
½ cup Butter
½ cup Sugar
Topping
1 cup Sugar
2 tbsp All purpose flour
½ tsp Baking powder
¼ tsp Salt
2 Eggs, lightly beaten
2 tbsp Grated lemon zest
2 tbsp Lemon juice
Icing sugar
Crust

In food processor or mixing bowl, combine flour, butter and sugar; mix well.
Press into greased and floured 8 inch square (2 L) baking pan.
Bake in 325°F (160°C) oven for 20 minutes or until golden.
Topping

In food processor or bowl, combine sugar, flour, baking powder, salt, eggs, lemon zest and juice; mix well.

Spread over base and return to 325°F (160°C) oven for 20 to 25 minutes or until nearly set.

Let cool in pan. Dust with icing sugar. Makes about 20 small squares.
