Ham mousseI have made this recipe many times, it is perfect for a summer buffet. Beware it is quite rich...and remember that gelatin based dishes do not tolerate heat very well, so do not let this out in the sun....
Haricot bean and onion casseroleThe haricot bean, navy bean, pearl bean, Boston bean, white pea bean, or pea bean is a variety of the common bean. It is a dry white bean that is smaller than many other types of white beans, and has an oval, slightly flattened shape. This recipe comes from a good friend in Wales it is a wartime recipe which has been adapted slightly. It is very thrifty but surprisingly good to eat.
Harry Potter themed cake 2021This cake was made by stacking red and yellow cakes, icing the cake with white butter cream, and decorating it with marzipan eyeglasses and the "thunder/scar" emblem. I also made a red and gold marzipan scarf around the base of the cake. The wand was made using chocolate "cigarettes and pocky sticks, gluing them together with melted chocolate, then sculpting the cooling chocolate to give it texture and shape. I sprinkled some edible gold powder over parts of it. The witches hat are made with small ice cream cones painted inside and out with melted chocolate, then filled with chocolate mousse (I added a but of caramel in the tip but that is a bit of overkill) then I glued each cone to a chocolate wafers, again using melted chocolate.
Hollandaise sauceA standard! This is used in many recipes: eggs Benedict being one of them. Cook this in the thickest pot you have. The challenge is to thicken without over cooking/ curdling so be carefull and do not leave it! If you need to keep it warm, do so in a double boiler over simmering water to prevent overheating.
Homemade granolaI like to sprinkle this over yogurt... it is also good as cereal with milk or over ice cream or as is... This is a very adjustable recipe, you can add or subtract any ingredient you do not have or like. The quantities are quite large, so splitting between two baking sheets avoids spills. Here are the differences between various kinds of oats: Old fashioned , or rolled oats are flat and flakey absorb more water than see-cut oats and cook faster (5 minutes). Steel cut oats or Irish oatmeal, are chopped into tiny pieces have a tough texture and cook in 20-30 minutes. Quick cook cook in one minute and Instant microwave in minutes.
Ice Cream BombI made this once, and do not plan to do it again because the various flavors get mixed up and you cannot savor each one as one should.
