Perfect fo left over roast beef Serve this over egg noodles!! Very comforting especially in winter.

Ingredients
3 lbs beef, very thinly sliced in strips
3 large onions, finely chopped
1 lb mushrooms, sliced
1 can beef consommé
1 small can tomato paste
1 small container sour cream
1 glass Sherry
1 tsp paprika
salt and pepper, to taste

In a large pan, on the stove, sauté the onions and mushrooms in a little bit of oil. Push them around the pan.

In the same pan, sauté the strips of beef, on high heat without burning. As they colour, push them to the side with the onions and mushrooms.

Sprinkle the paprika. Add the consommé.

Mix together the sour cream and the tomato paste and then incorporate into the preparation.

Season to taste. Let simmer 15 minutes. Pour the Sherry. Let simmer another 10 minutes.
