MoussakaMoussaka is a traditional Greek eggplant casserole made with baked or pan fried eggplants (aubergines) and potatoes, a rich, tomatoey beef or lamb mince sauce and topped off with a deliciously creamy bechamel sauce. In other words, the ultimate comfort food. I am still trying to recreate the one I had in Athens on my first night there, on a little restaurant rooftop terrace facing the Acropolis.
OssobuccoA favourite of mine, Ossobuco is Italian for "bone with a hole" (osso "bone", buco "hole"), a reference to the marrow hole at the centre of the cross-cut veal shank. The marrow in the hole in the bone, a prized delicacy, is the defining feature of the dish. This used to be an inexpensive dish but now those pieces of meat can get pricey. Some people will use pork, but I still prefer veal.
Oven baked BBQ ribsFor those of you who do not have access to a grill, this recipe is an impressive option You can adjust the spices in the rub and sauce to your liking. You can use a store bought BBQ sauce if you wish but, if not, the recipe in here uses the same spices as the rub so there is consistency and if you did not use up all the rub just add it to the liquids in the recipe and you are done.
Poke bowlThese bowls are as pleasing to the eye as they are to the palate! It is a very versatile recipe: you can change the fish for roasted shrimp, tofu or even chicken, and you can add mango slices or any other raw vegetable.
Pork tenderloinThis is an easy and flavourful meal you can prepare ahead. If you want to avoid excess fat, slip a metal rack under the meat before cooking. The fat will drain. I serve this over a "confetti" rice, using leftover onions and tomatoes.
