I threw a dinner party and tried a new kind of appetizer. In France they call this “Verrine” which contains the word “verre” which means glass. As you can see it is served in a glass. I suppose it can be made with any number of ingredients. I filled mine with a layer of avocado purée, flavoured with a bit of lime juice, then a layer of finely diced tomatoes and sweet peppers, flavoured with olive oil and tabasco, then a layer of smoked trout, topped with a dollop of sour cream and a sprinkling of pink peppercorns… They are very colourful and decorative on a dinner table…
