Easter is often associated with eggs: egg hunts, painted eggs, chocolate eggs… To carry this theme I chose a recipe for my Easter brunch that involves omelets: three of them! Each one a different colour. A green one made with watercress and spinach purée, a red one made with tomatoes and garlic and an ordinary yellow one. In preparing them I came across an oddity: a two yolk egg. If you look closely at the photo you will see these are not 2 eggs together, it is really two yolks surrounded by one egg white. I wonder if there are twin chickens in nature coming out of one egg…
For those of you who are curious, the recipe entailed cutting circles out of the omelets and piling them up sandwich style with layers of very finely chopped ratatouille. I finished the plate off with a reduction of balsamic vinegar…an elegant vegetarian dish…
