While in Vegas I tried one very special restaurant: Atelier Joel Robuchon.

The setting was gorgeous, we were seated at the bar thus could watch the cooks preparing the food and dressing the plates. The food was delicious but what really made the experience memorable was dessert.
The dish was called “Framboise” (french for raspberries).
The plate that was presented contained a sphere surrounded by fresh raspberries and decorated with some squiggles of sauce.
It was perrty in its own right but…. this was not all there was.
The server started pouring some sauce over the ball…it was a hot sauce…
As the sphere was made of white chocolate, the sauce melted it as it dripped down , forming wedges that opened up like a flower, revealing a serving of sherbert…
This was not only wonderful to watch it was equally pleasant to eat…
This is, to date, the most original dessert I have ever had..
