Ingredients
2 lbs cubed beef (round or sirloin)
½ lb bacon
2 chopped onions or pearl onions
1 carrot, sliced
1 small can tomato paste
1 bottle red wine
parsley, garlic, thyme, bay leaf
½ lb mushrooms, sliced

Cut the bacon in smaller pieces, and sauté them in a large pot.

Sauté the onions until golden, then remove them with a slotted spoon.

Roll the meat pieces in some flour and then, sauté them, little by little, removing them to a warm plate once they are browned.

When the meat is all done return it as well as the onions to the pot and add the wine.

Add pepper, carrot, seasonings.

Cover and lower heat.

Simmer for 2 hours.

Meanwhile sauté the mushrooms in butter and add them to the pot along with the tomato paste 15 minutes before the end of cooking time. Mix well.
