This is lovely over cake, ice cream, pancakes....or even by the spoonful!

2 cups blueberries (fresh or frozen)
⅓ cup sugar
2 tbsp water
1 tsp vanilla or lemon zest

In a pot, mix 1 cup (250 ml) blueberries, sugar and water.

Bring to a boil, lower the heat and simmer, while stirring once in a while for 5 to 7 minutes, or until the blueberries have burst and the sauce thickened.

Remove pot from heat. Add vanilla et the remaining blueberries and mix.

Serve hot or at room temperature. Store in refrigerator.
