This is a traditional french garnish for steaks. Easy to make ahead and freeze.
8 tbsp softened butter
juice of 1/2 lemon
1 tbsp finely chopped fresh parsley
salt and pepper

Mix well, either by hand, blender or food processor.
Prepare this ahead of time, wrap it like a sausage in plastic wrap (or foil) and freeze.
You only need to slice off what you need as you need it.
You pace a slice on a hot piece of meat and watch it melt...
