2 lbs beets, grated
1 whole cabbage, grated
2 carrots, grated
1 onion, grated
1 garlic clove
6 cups beef consommé
2 cans tomato soup
1 lemon, juiced
1 bunch parsley
salt, pepper and bay leaf

Peel and shred the vegetables.

Mix with liquids.

Cook for one hour. Add water if the soup seems too thick.

Remove bay leaf and serve. Try serving it with a spoonful of sour cream!
