Florentines

Despite their name these are not Italian, they originate in France and southern Germany. They are soo scrumptious yet easy to make, there is no reason to deprive yourself.
The number of cookies depends on their size. The smaller the spoonfuls of dough the more cookies will result, and the flatter they will be (this is a matter of personal preference)

Yields12 Servings
 1 cup Blanched and slivered almonds
 ¾ cup Chopped candied orange peel
 ¾ cup All purpose flour
 3 tbsp Butter
 ½ cup Heavy cream 35%
 ½ cup Sugar
 1 cup Chocolate chips (or 4 semi-sweet baking chocolate squares)

Mix nuts, fruits and flour

Mix butter, cream and sugar in a heaving pan

Bring to a boil

Remove from heat and incorporate the fist ingredients mix

Grease and flour 2 cookie sheets

Drop spoonfuls of the mix at least three inches apart

Cook on 350° F for 10 minutes, until golden

Let cool on the sheets then move to cooling rack until completely cool

Melt chocolate and brush the underside of the cookie with the melted chocolate.
Let dry chocolate dry before plating.
