Fruits

Today I made a meal mostly composed of fruits…it was not my initial intention as I was trying to put together an Australian/ New Zeland menu, but that is how it turned out.
It started with fresh figs stuffed with blue cheese and wrapped in a ribbon of prosciutto.
There was a mango salsa to go with the meat. But the most unusual dish for me was the salad: a mix or watermelon, feta cheese, pistaccio nuts, mint and basil, with a dressing made of rosewater, Riesling wine and pink peppercorns.
There were some veggies too mind you! A whole bunch of roasted peppers, tomatoes, onions and portobello mushrooms…very colourful!

The dessert was the biggest hit: it was pineapple pieces marinated in sake with sugar, star anise and cinnamon stick. Later all this was cooked until it caramelized. Finally the fruit was run through the blender. It was served, cooled, in frozen glasses with small pineapple chips…lushious!
