Camping themed cupcakesMade vanilla and chocolate cupcakes and decorated them with Italian buttercream (colored red yellow and orange), pretzels, topped with miniature mashmallows briefly grilled over a flame, and chocolate covered raisins for stones and pirouline cookies as logs.
Carrot cakeI have officially found a better recipe for carrot cake, here it is: it is a mix of my mother in law's recipe and one I found in a southern food magazine. Yes there is oil in it, but you cannot taste it. This cake requires three steps: the cake, the glaze and the icing. The glaze used on the "just out of the oven" cakes is delicious and adds a butterscotch flavour but it is not essential. I will still use this cake to make the garden cake, although I will not make layers as it is one large rectangle.
Carrot soupThis is perfect hot or cold, winter or summer. You can even add a peeled and cored pear to the vegetables. You can omit the fresh coriander if you do not like the taste. I sometimes like to add fresh grated ginger.
CassouletThis is a winter family favourite, easy to make ahead and reheat and or transport. It is my version of a typical "Plat toulousain" (from Toulouse in the south of France). The original has a bread crumb crust on top and takes forever to make. I suggest using a big enamelled cast iron pot for this recipe.
