Shakshuka

Shakshuka is a classic North African and Middle Eastern dish. I serve this in the pan directly on the table (be careful it will be hot). I like to serve this with toasted whole-wheat pita bread. You can adjust the “heat” by adding or subtracting some jalapeno peppers.

Roasted cauliflower

This recipe is probably healthier than the traditional cheese sauce covered cauliflower one, it is also very tasty.
You can play with the flavours using powders instead of the onion and garlic and adding or subtracting spices….

Raspberries and rhubarb crumble

This tastes great served hot over vanilla ice cream.
The choice of fruit can vary, apples and peaches are especially suited for crumbles, you can add spices accordingly such as cinnamon, ginger or nutmeg. You can also add 1/2 cup of old-fashioned rolled oats or 1/2 cup chopped nuts (or both) to the topping.
Crumbles will keep, covered and refrigerated, for up to 1 week. Serve cold, room temperature, or re-warmed in a low oven for 20 minutes.

Minestrone

This is a versatile and heartwarming soup, particularly nice in winter. All the ingredients and their quantities can be modified to suit your tastes and the contents of your fridge. Replacing the green beans by legumes will make the soup even more nourishing.
